01 - In a medium bowl or mason jar, add rolled oats, coconut milk, Greek yogurt, chia seeds, maple syrup, shredded coconut, vanilla extract, and almond extract. Mix thoroughly until all ingredients are evenly distributed and no dry pockets remain.
02 - Cover the container tightly and place in refrigerator for minimum 8 hours or overnight. This resting period allows oats to soften completely and flavors to meld together.
03 - Remove from refrigerator and stir well. If mixture appears too thick, add additional coconut milk 1 tablespoon at a time until desired creamy texture is achieved.
04 - Divide the oats evenly between two bowls or jars. Sprinkle toasted coconut flakes and chopped toasted pecans or almonds over each serving. Add fresh banana slices if desired.
05 - Serve immediately while cold. Store any leftovers in refrigerator for up to 3 days.
