Creamy Spinach Dip Sourdough (Printable version)

A rich spinach blend baked inside a hollowed sourdough loaf, ideal for parties or snacks.

# What You'll Need:

→ Bread

01 - 1 large round sourdough loaf (about 1.32 lbs)

→ Dip Base

02 - 8.8 oz frozen chopped spinach, thawed and drained
03 - 8 oz cream cheese, softened
04 - 7 oz sour cream
05 - 4.2 oz mayonnaise
06 - 2.6 oz grated Parmesan cheese
07 - 5.3 oz shredded mozzarella cheese
08 - 2 garlic cloves, minced
09 - 1 small onion, finely diced
10 - ½ teaspoon salt
11 - ¼ teaspoon ground black pepper
12 - ¼ teaspoon ground nutmeg (optional)

→ Garnish

13 - 2 tablespoons chopped fresh chives (optional)

# Directions:

01 - Heat the oven to 350°F.
02 - Remove the top of the sourdough loaf and hollow out the inside, maintaining a 0.8–1.2 inch thick shell. Cube the removed bread for dipping.
03 - In a large bowl, blend cream cheese, sour cream, mayonnaise, Parmesan, mozzarella, garlic, onion, salt, pepper, and nutmeg until smooth.
04 - Fold the drained spinach into the cheese mixture thoroughly.
05 - Spoon the dip into the hollowed bread bowl and place it with the bread cubes onto a baking sheet.
06 - Bake for 25 minutes until the dip is hot, bubbling, and golden on top.
07 - Sprinkle chopped fresh chives on top if desired. Serve immediately with bread cubes for dipping.

# Expert advice:

01 -
  • It looks like you tried way harder than you actually did, and that's the best kind of recipe.
  • Once you scoop out that bread bowl, you've already got built-in serving dishes and crackers ready to go.
  • The creamy, dreamy center stays warm the whole time people are eating, so it never feels like you're serving day-old dip.
02 -
  • Drain that spinach like your life depends on it—I learned this the hard way when I was lazy and ended up with a pool of water on top that made the whole thing look neglected.
  • Softening the cream cheese first is non-negotiable, because trying to mix cold cream cheese with everything else means you'll spend ten minutes stirring and still have lumps.
03 -
  • Don't skip the nutmeg—it's barely perceptible, but it makes people taste spinach instead of just cream, and that's the whole game.
  • If your dip seems like it might break or look greasy, you probably added the cream cheese while it was too cold; next time, give everything another minute of stirring and it'll come together.
