01 - In a medium mixing bowl, blend softened cream cheese, powdered sugar, and vanilla extract using an electric mixer until smooth and creamy.
02 - Stir graham cracker crumbs into the cream cheese mixture until fully combined.
03 - Spread the mixture evenly to 1/2 inch thickness on a baking sheet lined with parchment paper. Freeze for 1 hour until the mixture is firm.
04 - Using a star-shaped cookie cutter, cut out individual stars from the chilled cheesecake layer. Place each star on a clean, parchment-lined tray.
05 - Carefully insert a lollipop stick into each cheesecake star, then return the stars to the freezer for 30 minutes until set.
