01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Cut the puff pastry sheet into 12 equal rectangles if using mini sausages, or 24 rectangles if using halved regular sausages.
03 - Place one sausage on the short end of each pastry rectangle and roll up tightly. Position seam-side down on the prepared baking sheet.
04 - Brush the tops of each roll with beaten egg. Sprinkle with sesame or poppy seeds if desired.
05 - Bake for 15 to 18 minutes, or until pastry is golden brown and puffed.
06 - Allow to cool slightly before serving. Serve warm with ketchup and mustard.
