01 - Preheat oven to 400°F. Pat chicken thighs dry and season both sides with salt, black pepper, garlic powder, and smoked paprika.
02 - Heat a large oven-safe skillet over medium-high. Add a small amount of oil and sear chicken thighs for 2–3 minutes per side until golden brown. Remove chicken and set aside.
03 - Lower heat to medium. In the same skillet, melt butter. Stir in honey, soy sauce, minced garlic, apple cider vinegar, and Dijon mustard. Simmer 1–2 minutes until slightly thickened.
04 - Return chicken thighs to skillet, turning to coat thoroughly in honey butter sauce.
05 - Transfer skillet to oven and bake for 20–25 minutes, basting chicken once or twice with sauce, until internal temperature reaches 165°F.
06 - Remove from oven. Spoon extra sauce over chicken and garnish with fresh parsley or green onions. Serve hot with cooked rice or steamed vegetables.
