01 - Preheat the oven to 425°F. Line a baking sheet with parchment paper or grease it lightly.
02 - Toss the sweet potato cubes with olive oil, ground cinnamon, sea salt, and black pepper in a large bowl until evenly coated.
03 - Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet.
04 - Roast for 25 to 30 minutes, turning once midway, until golden and tender.
05 - Remove from oven. Optionally, drizzle with maple syrup or honey and sprinkle with fresh parsley before serving.
