# Expert advice:

01 -
  • The house smells incredible all day long, which is honestly half the reason I make it so often
  • It is the ultimate set it and forget it meal, giving you back hours of your day
  • Leftovers somehow taste even better, making Monday nights feel special
02 -
  • Searing might seem like an extra step, but those browned bits are where the deep, caramelized flavor comes from
  • Resist the urge to lift the lid during cooking, as every peek adds twenty minutes to the cooking time
  • The roast is done when it literally falls apart with zero resistance from a fork
03 -
  • Pat the beef extremely dry before searing for the best browning, moisture is the enemy of a good crust
  • Use a six quart slow cooker or larger so everything fits without overcrowding, which can lead to uneven cooking
