01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - In a large bowl, beat softened butter and granulated sugar until light and fluffy, approximately 2-3 minutes.
03 - Beat in egg and vanilla extract until fully incorporated.
04 - In a separate bowl, whisk together flour, baking powder, and salt.
05 - Gradually mix dry ingredients into wet mixture until just combined. Do not overmix.
06 - Gently fold diced strawberries and strawberry jam until evenly distributed throughout dough.
07 - Sop tablespoon-sized dough balls onto prepared baking sheets, spacing 2 inches apart.
08 - Bake for 11-13 minutes until edges just begin turning golden brown.
09 - Remove from oven and immediately press one chocolate kiss into center of each cookie.
10 - Let cookies rest on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
