01 - In a medium bowl or large jar, combine oats, milk, Greek yogurt, chia seeds, honey, vanilla extract, and salt. Stir thoroughly until fully incorporated.
02 - Gently fold in the diced strawberries until evenly distributed throughout the mixture.
03 - Cover the container and refrigerate for at least 6-8 hours, preferably overnight, to allow oats to soften and flavors to meld.
04 - In the morning, stir the oats. If mixture is too thick, add a splash of milk to reach desired consistency.
05 - Divide into serving bowls or jars. Top with extra strawberries, nuts, or coconut if desired. Serve chilled.
