Creepy brain-shaped crispy rice treat filled with oozing berry jam for Halloween parties.

# What You'll Need:

→ Crispy Rice Brain Base

01 - 6 cups crispy rice cereal
02 - 3 tablespoons unsalted butter
03 - 10 oz mini marshmallows (1 standard bag)
04 - Red or pink food coloring

→ Spooky Berry Filling

05 - ½ cup raspberry or strawberry jam
06 - 2 tablespoons seedless raspberry or strawberry coulis (optional)

→ Decoration

07 - Additional food coloring for detailing (optional)
08 - Candy eyes or sprinkles (optional)

# Directions:

01 - Line a medium bowl with plastic wrap to create a brain-shaped mold, or use a brain-shaped silicone mold if available.
02 - In a large saucepan over medium heat, melt the butter. Add the mini marshmallows and stir constantly until completely melted and smooth.
03 - Add a few drops of red or pink food coloring to achieve a brain-like hue. Mix thoroughly until the color is evenly distributed throughout the marshmallow mixture.
04 - Remove from heat and stir in the crispy rice cereal, mixing until evenly coated. Allow to cool for 2-3 minutes until safe to handle.
05 - Lightly butter your hands. Press half the cereal mixture into the prepared mold, pressing up along the sides to create a hollow cavity in the center.
06 - Spoon the jam and optional coulis into the cavity, keeping it centered. Avoid overfilling to prevent leakage during sealing.
07 - Gently cover with the remaining cereal mixture, pressing edges together to seal the filling inside. Shape the exterior to enhance brain-like ridges and contours.
08 - Let set at room temperature for 20-30 minutes until firm. Carefully unmold onto a serving plate by inverting and removing the plastic wrap.
09 - Use food coloring and a small brush to add detailed ridges or highlight lines. Add candy eyes or sprinkles for extra spooky effect. Slice to reveal the oozing berry filling.

# Expert advice:

01 -
  • The combination of crispy, chewy, and gooey textures is incredibly satisfying and fun to eat
  • Its the kind of party food that makes people immediately pull out their phones for photos
  • Surprisingly simple to make even if youre not usually crafty in the kitchen
02 -
  • Butter your hands generously before pressing the cereal into the mold or it will stick painfully to your skin
  • Let the marshmallow mixture cool slightly before mixing in the cereal or the cereal will get too soft and lose its crunch
  • The filling will settle to the bottom if you let the brain sit too long before cutting, so plan to serve within an hour or two
03 -
  • Work quickly once the marshmallow mixture is ready because it stiffens fast and becomes impossible to mold
  • Have a damp paper towel nearby to wipe off your hands between shaping steps for cleaner edges
